To begin, Wendi emphasizes the importance of purchasing a fresh turkey as a foundation for the dish, meaning a bird bought at a farmer’s market or local farm instead of one purchased from the grocery store. “A fresh turkey that costs more than a store-bought one is worth the price difference due to its much better taste,” adds Chef Wendi.
Her original brine mix consists of chicken stock, brown sugar, garlic, and bay leaves - and according to Wendi, placing the bird in this solution for 24 hours will lead to a more tender and flavorful turkey. For the classic golden brown turkey look, Wendi says she recommends applying butter on the Wednesday before the big holiday.
“Once the butter is applied, the turkey should be left uncovered in the fridge overnight,” explains Wendi. “On Thanksgiving day, I recommend adding salt, pepper, aromatics, and stock before baking,” she adds.
